Applesauce to the Rescue!
To me, applesauce is a diet saver. Whenever I try and stick to a low fat diet, I go crazy not being able to eat brownies or cookies or other yummy baked goods, but I also can’t bring myself to put in all that oil or butter that these recipes call for.
You can replace applesauce for oil, butter, Crisco, or other types of shortening in a recipe and not only is the result healthier and lower fat, but is delicious—moist, sweet, and fluffy! Personally, when it comes to taste, I prefer my chocolate cake made with applesauce.
Applesauce also offers benefits to people who are taking diet pills, especially pills like generic Xenical which prevent your body from absorbing too much fat. If you’re taking Xenical, then you know how important it is not to overload your body with fat—it ends up running straight through yours system and you end up spending WAY too much time in the bathroom. That’s the good thing about fat-cutters like generic Xenical—they force you to alter your diet. And you can cut fat easily by using applesauce.
Try this delicious and healthy cake on your next low-fat diet!
Zucchini and Carrot Applesauce Cake
3 eggs (or 6 egg whites)
1 cup applesauce
1½ cup brown sugar (or 1 ¼ cup Splenda)
1 cup grated zucchini
1 cup grated carrots
2 tsp. vanilla
2½ cups whole wheat flour
½ cup of fiber-rich bran cereal
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
Beat eggs with applesauce. Add sugar, zucchini, carrot, and vanilla. In a separate bowl mix flour, bran, salt, baking soda, and cinnamon. Add the wet mixture to the dry mixture. Mix. Pour into two loaf pans and bake at 350 degrees for 1-1½ hours.
